On to happier notes....another page, another cheesecake recipe!

White Chocolate Raspberry Cheesecake

Ingredients

* 1 cup chocolate cookie crumbs

* 1 (10 ounce) package frozen raspberries

* 1/2 cup water
* 2 cups white chocolate chips
* 1/2 cup half-and-half cream
* 3 (8 ounce) packages cream cheese, softened
* 1/2 cup white sugar
* 3 eggs
* 1 teaspoon vanilla extract

Directions

1. In a medium bowl, mix together cookie crumbs, 3 tablespoons sugar, and melted butter. Press mixture into the bottom of a 9 inch springform pan.
2. In a saucepan, combine raspberries, 2 tablespoons sugar, cornstarch, and water. Bring to boil, and continue boiling 5 minutes, or until sauce is thick. Strain sauce through a mesh strainer to remove seeds.
3. Preheat oven to 325 degrees F (165 degrees C). In a metal bowl over a pan of simmering water, melt white chocolate chips with half-and-half, stirring occasionally until smooth.
4. In a large bowl, mix together cream cheese and 1/2 cup sugar until smooth. Beat in eggs one at a time. Blend in vanilla and melted white chocolate. Pour half of batter over crust. Spoon 3 tablespoons raspberry sauce over batter. Pour remaining cheesecake batter into pan, and again spoon 3 tablespoons raspberry sauce over the top. Swirl batter with the tip of a knife to create a marbled effect.
5. Bake for 55 to 60 minutes, or until filling is set. Cool, cover with plastic wrap, and refrigerate for 8 hours before removing from pan. Serve with remaining raspberry sauce.

Hehehe...I'm still trying to find a Dr Pepper Cheesecake. From what I read, soda in a cheesecake is a baking problem. So...I might find a white chocolate cheesecake, and find a recipe for a Dr. Pepper frosting to go on top (which would have chocolate base). I dunno. Still thinking about it.

Ed thinks I'm a little weird sometimes with my food combinations. I'm just seeking out new flavors to try. I still personally think a donut sundae is a great hit.

Have you tried getting a dr. pepper syrup? It would be VERY sweet so you'd have to adjust the recipe to work, but you might be able to find it online.

Wellllll I did want to make it to York of New this year to catch a Yankees game and see Skippervich and TreyEdovichWizzle and Cheezecakelette

But I has to attend a family wedding in Texas so my New York trip will haz to wait another year.

I won't get to meet any CW'ers this year

Also, it's a good thing that you said very sweet and not too sweet.

That depends on your personal tastes. It is indeed very sweet. I've had the experience of getting a Dr. Pepper from a fountain, and only got the syrup... no carbonation. Like an idiot, I tasted it. It was too sweet for me.

The Year in Review:

2009 has been a milestone of a year in my life. A year ago I was living in Texas with 3 roommates, working full-time, and making plans for the year.

In January I flew out to Upstate NY to see my boyfriend, and meet his daughter and family. The weekend concluded with a ring and a question before flying back to Texas.

Once returning to Texas I started the new job of finding a way to move to NY asap. I began the grueling task of job searching, and after much discussion and prayer, we decided to move myself to NY in faith that finances would work out as we planned for an August wedding.

In March, Ed flew out to take me home to NY, and we said our farewells to my dearest of friends in TX. We made the 30 hour drive, stopping to see my brother and family, and finished our move to his friends'/my new friends' house at his church. There, I was greetly warmly and immediately immersed into his real family and church family.

I spent much time job searching, preparing for our upcoming marriage, and spending much time with Cheesecakelette.

On August 1, I became Mrs. Iwillfearnoevil, and we dashed off to Hawaii and met Ariella, Dawgfan, and Saraimay. After returning I finally found a job, and stepped into the role of motherhood and wifehood. In this year I've had a lot of firsts....my first "real" winter, my first adult pair of winter boots and coat, my first attempts (not so successful) at home repair, my first time to cut down a Christmas tree, my first trip to Yankee stadium!

I cannot wait to see what 2010 will bring...what are you all looking forward to in the next year?

ROFL Pam is a Diet Coke drinker, so we have a mixed marriage.

And she brought me a slice of cheesecake from her mother's that evening, so I can say that the best cheesecake is what my wife gives me.

When we were in Tennessee for the family reunion/wedding we did karaoke on a couple of nights and I did "Kryptonite" among other songs. I also sang the bass part on "Elvira" with a quartet. That is on video that my BIL has. I have married into a family of singers and my singing talents are not in their league, so everyone had a good laugh with my singing.

Thanks, Ray. I've certainly enjoyed the company of those who have hung out here.

Yesterday, Ed agreed that we could go to our favorite cheesecake place (45 min drive away). We have only gotten over there once since the wedding, so I was really excited. We got there and they were sold out of cheesecake and therefore closed! I was so so disappointed! The last time we stopped in there, they said they've been so busy that they've been selling out of cheesecake by 4pm (they open at 12). All of their cheesecakes are made single batch by two people (which is why they're soooo good).

So, we went by Cheesecake Factory and got a slice to go. It's good, but doesn't hold a candle to this other place. *sigh*
